Salads To Go

How many times have you wanted a healthy salad, but used the excuses that you either had no time or had no money?

Salads To Go by Fitness VIP Studios, reveals ways of preparing tasty salads in mason jars that last for up to 7 days in the fridge. This is not only convenient, but it allows you to prepare ahead of time with your wallet by buying ingredients that are at the dollar store and on sale each week at your local grocery store.

If you do not have jars, they may be easily found at yard sales for spare change. If not, go to your local dollar store.

There are 3 layers to a salad jar:

1. bottom layer = your salad dressing
2. middle layer= harder ingredients, such as cherry tomatoes, cucumber, mushrooms, broccoli, peas and bell peppers
3. top layer = leafy vegetables, such as lettuce, spinach and/or mixed greens

Before closing the lid, keep a paper towel on top of the salad to keep it from wilting, then seal the lids to refridgerate.

7 homemade salads are included in this book. I have selected 2 that I myself would like and could afford...

Simply Sicilian Salad

Bottom
3 tbsp extra virgin olive oil
2 tbsp balsamic vinegar (I would use red wine)
1/2 tsp oregano
salt and pepper

Middle
olives
tomatoes
pepperoni
mozzarella

Top
romaine

Shake and voila!

Classic Italian Salad

Bottom
1 tbsp apple cider vinegar
3 tbsp olive oil
1/4 minced garlic
1 tsp chopped basil
1/4 tsp oregano
1/4 tsp honey

Middle
red bell pepper (I would use green bell pepper)
cucumber
cherry tomato
red onion (I would leave out)
mozzarella
pepperoni

Top
spinach

Shake and voila!

As mentioned above, the bottom layers may all almost be found at your local dollar store. As for the middle and top, make sure you look at the circulars for the weekly sales on deli, produce and olives. With a little effort, it is possible to have a healthy salad. The 2 I have selected were the most affordable and tasty. However, feel free to mix and match if you would prefer.
