Potatoes are definitely the energy or filler upper of this recipe. No matter what experts say, all of that peanut butter that they say is energy for before and after a workout, for a snack or for lunch is baloney. Personally, I get so tired and just want to sleep after consuming peanut butter... You call peanut butter energizing? Yes, there is a little peanut butter in the recipe, but not the main ingredient.
Potatoes are a comfort food, yet a healthy food! Do I make sense? This recipe makes potatoes shine, regardless of what the experts say.
In my own review:
Insides of large baked potatoes (about 3 potatoes)
3 tablespoons natural peanut butter
1 teaspoon vanilla extract
¼ cup maple syrup
1 cup rolled oats
1 teaspoon ground cinnamon
½ cup dried cherries (optional) (any dried fruit)
Mix all ingredients.
Form into balls.
Place on pizza tray or cookie sheet.
I bet you already have the ingredients in your pantry! If not, what is the cheapest item you can buy at a grocery store? 1 pound, 5 pound, 10 pound bags of potatoes! All of the other ingredients may be found at your local dollar store!
After having had an potato energy bite, you are unlikely to binge.
So, the next time you need energized, make yourself a batch of potato energy bites!
